Spicy Vegetable Soup

Ingredients
8 C Veggie Broth4 C Water2 C Carrots, chopped1 C White Onions, chopped3 C White Potatoes, chopped2 cans of sweet corn1 C each kidney beans & hot chili beans4 Large Tomatoes, chopped (or 3 cans of diced)3 Cloves of Garlic, chopped4 T Chili PowderSalt & Pepper to taste
Directions
Add broth, water, onion, garlic & carrots to a large stock pot. Bring to a boil. Turn it down to just under a boil & simmer for approx. 30 min (once carrots are tender)

Then add beans, tomatoes & corn. Bring back up to just below a boil & simmer for 30 min.

Add Potatoes & chili powder. Continue to simmer for approx. 15 min (when potatoes are tender).

Add salt & pepper to taste.

Also, to serve, I added a bit of shredded mexican blend low-fat cheese & some fat free sour cream!
