Easy no-boil lasagna

Lasagna noodles1 jar pasta sauce1 small can sliced olives1 medium onion, chopped1 c. ricotta cheese (low fat)1 c. cottage cheese (low fat)16 oz mozzerella cheese (part skim), grated1/2 c. grated parmesan cheese parsley
Preheat oven to 375 degrees. Brown onion in pan. Add pasta sauce and olives. Heat thoroughly. In separate bowl, combine ricotta and cottage cheeses. In 9x13 pan, layer 1/3 of sauce mixture, then uncooked noodles, then 1/2 of ricotta/cottage cheese mixture. Top with 1/3 of grated mozzarella and parmesan cheeses, and 1/3 of parseley. Next, layer sauce, noodles, cheeses, parsley, and top with remaining sauce. (reserve 1/3 of grated cheese for topping) Cover with foil and bake for 45 minutes. Remove foil, sprinkle with remaining grated cheeses and parsley. Bake 15 more minutes. Remove from oven and allow to rest before cutting.
