Cheese Burger Pie (broccoli, onion, corn)

1lb 93% lean ground beef1 large onion, chopped2 1/2 cup chopped frozen broccoli1 1/2 cup frozen corn1 1/2 cup shredded Colby Jack Cheese1/2 cup Original Bisquick Baking Mix1 cup skim milk1 eggs
1. Preheat Oven to 400F. Spray a 9inch pie plate with cooking spray.
2.Brown Hamburger in a large skillet with onion. Add broccoli and corn when the hamburger is mostly cooked.
3. Pour into the pie plate and spread into the pie plate.
4. Sprinkle the top with the cheese
5. In a small bowl, whisk together Bisquick, milk, and eggs until blended.
6.Pour the Bisquick mixture into the pie plate evenly.
7. Bake for 25 minutes or until a knife in the center comes out clean

I do this without the bisquit mix, parially cook off the hamburger after seasoning, add diced onions, broccoli, peppers if you want. Top with either instant mashed potatoes or fresh, depends on what you want. Follow that with a shredded topping of your favorite cheese (cheddar, colby, etc.) bake. - 6/16/10
