Mango Curried Cabbage

Ingredients
1 T olive oil1 medium onion, sliced3 cups red cabbage, chopped1 cup low sodium chicken broth1/4 cup PC Memories of Bengal Curried Mango Sauce1 cup frozen peas
Directions
Saute the onion in oil until soft. Add the cabbage, broth, and curried mango sauce. Cover and simmer, stirring often and adding more broth if needed. Cook until cabbage is soft. Add peas and heat through. Serve over brown rice.

Makes 4 servings, roughly 1/2 cup each.

Calories with 1/2 cup brown rice are 220. Just add protein for a complete and filling meal!
