Sneaky Chef Fortified French Toast

Ingredients
2 large eggs1/2 cup skim milk1/4 cup sweet potato puree1 TBSP honey1 teaspoon cinnamon1 teaspoon Vanilla extract7 slices whole wheat bread5 cups Total Cereal
Directions
Mix first 6 ingredients together. Put total cereal in blender or food processor to crush fine. Heat skillet and spray with cooking spray. Dip bread in egg mixture, then dip in cereal mix then put in hot skillet, cook on both sides until cooked through. I like this just as they are. But you can serve with syrup as well Once my husband added Coconut flakes to his as well.
I have accidently forgotten to add the milk once and it was still fine, just made about 4-5 slices instead. It was a bit thicker so you did get more of the puree on each piece.
