3 Large Eggs1/4 Cup Diced Lean Ham1/4 Cup Grated Swiss Cheese2 T. Chopped Green Onions1/8 tsp. Black Pepper
Preheat oven to 350 degrees F. In a medium bowl, beat together the eggs, ham, Swiss cheese, green onions and pepper. Place muffin liners in muffin pan and spray with cooking spray. Pour mixture in each of the lined cups. Place in the oven and bake for 20 - 25 minutes, or until firm and lightly browned on top.
