Margarita Salmon

Ingredients
.5 lbs salmon (or any light white fish)juice of 1/2 lemon (adjust to taste)juice of 1/2 lime (adjust to taste)juice of 1/2 orange (adjust to taste)1 oz Tequila
Directions
Preheat grill. Wash and pat dry salmon. Lightly coat salmon with olive oil and lightly season with salt. Grill salmon for 4-6 minutes (skin side down), flip and grill an additional 4-6 minutes.

While salmon is grilling combine lemon, lime and orange juice in skillet and slowly heat. Add tequila and cook for 1 -2 minutes. Turn off heat.

Remove salmon from grill. Place in skillet and let sit in mixture for 30 seconds. Flip and let sit an additional 30 seconds.

Serve while warm.

Pairs nicely with fresh sliced veggies or freshly steam asparagus.
