Dal (Indian Lentil Puree)

Ingredients
Directions
1 cup red lentils3 cups of water.75 tsp garlic1 tsp ginger root.5 tsp ground turmeric.75 tspn salt1 jalapeno pepper1 plum tomato2 tbsp cilantro
Rinse, pick over, and place in a large saucepan:
Red lentils
Add:
2 cups water
1 small sliced onion
.75 tspn minced garlic
1 tspn minced fresh ginger
.5 tspn turmeric
Bring to a boil, then reduce the heat and simmer, covered, until the lentils are tender, 20 - 25 minutes.
Stir in:
1 cup water
.75 tspn salt
Simmer, partially covered, until the dal is thickened to the consistency of split pea soup, about 20 minutes.
Stir in:
2 peppers, seeded and finely chopped
1 plum tomato, diced
2 tbsp chopped cilantro
