Reduced Fat Garlic Mashed Potatos

5 pounds Russet potatoes2 Knorr Chicken bullion1 teaspoon salt9 cloves of garlic8 OZ low fat Neufchatel cream cheese8 OZ reduced fat sour cream
Scrub potatos and cut them into chunks. Rinse well and transfer to a large pot. Cover with cold water, add salt miniced garlic and bouillion. Bring to a boil and cook approximately 10 minutes, or until potatos are fork-tender.
Drain, reserving liquid. Add cream cheese and sour cream to pan and mash potatos and garlic, adding reserved liquid as needed to achieve desired consistency.
Transfer to slow cooker and cook on low for 2 hours. Before serving,stir well an season with ground black pepper to taste
Makes approximately 25 (1/2) cup servings.
Note can be preprared up to the point of transfer to slow cooker and refrigerated. However, if you to this, you will need to increas the slow-cooker cooking time to 3 to 4 hours.
