Crustless Vegetarian Quiche

Ingredients
12 eggs-large1/2 cup milk1/2 cup mushrooms1/2 cup fresh tomatoes12 asparagus spears1/2 cup spinach1/4 cup onion1/2 tbsp cayenne pepper1/2 tbsp black pepper1/2 tbsp garlic salt1 cup cheddar cheese reduced fat
Directions
Makes 6-8 servings
Steam all veggies but tomatoes in steamer or rice cooker until tender.
Pre-heat oven to 350F
Mix 12 eggs and 1/2 cup milk in blender or with electric mixer for 1-3 minutes
Spray 9x13 casserole dish or baking dish with non stick spray (no fat)
Combine all ingredients in casserole dish and bake for 45 minutes or until knife comes out clean when inserted.
