Roasted Veggie Quiche

Ingredients
4 large eggs1/2 cup 1% milk (or whatever you drink)1/2 cup shredded cheddar1/2 t nutmeg1 t black pepper1 t salt2 servings roasted veggies (recipe in album)
Directions
Spray an 8 or 9 inch round pan with cooking spray (or grease as you see fit).

Layer your mix of roasted veggies on the bottom- use 1 1/2 to 2 cups.

Sprinkle 3/4 of the cheese over the veggies.

Mix together the milk, eggs, and spices. Pour over the veggies and let sit for a couple minutes. Sprinkle the top with the remaining cheese

Bake at 350 for about 30 minutes, or until set.

Garnish with basil and/or chives.

Estimated 6 lunch servings. I'd round it out with a salad :)
