Simple Tomato Bruschetta

8 ripe Roma or plum tomatoes, chopped2 cloves garlic, minced5 leaves fresh basil, choppedpinch salt2 tablespoons extra virgin olive oil1 loaf Italian bread, bagette, or ciabattaOptional:*pinch black pepper and/or red pepper, finely shredded fresh parmesan cheese*
In a large bowl, combine the tomatoes, basil, oregano, olive oil and garlic to mascerate while bread you prepare the toast. On a cutting board, thinly slice bread at an angle. Place bread slices on baking sheet and place under broiler to toast lightly, turning to brown both sides. Spoon bruschetta over toast, sprinkle with shredded parmesan, and arrange on platter. Serve Immediately.
****Alternative method: Simply place toast in basket, and bruschetta and cheese in bowls to allow guests (or family) to fix their own. (With this method you don't need to worry about toast getting soggy.)
****Yet another alternative method: Gently score bread slices before toasting. Once done, lightly rub garlic clove over the toast, and drizzle each slice with a scant amount of olive oil (or use olive oil spray).
