Walnut-Crusted Chicken with Pomegranate sauce

4 Chicken Breast, skinless, boneless (5 oz.)1 Egg White1 T Water1/2 C. Walnuts (finely chopped)1/4 C. Bread CrumbsSauce2 C. Pomegranate Juice2 t. Crystallized ginger (minced)1 T. Honey
Preheat oven to 425 degrees. Coat a baking sheet with cooking spray.
Whisk the egg white with the water in a shallow dish. Combine bread crumbs and walnuts in another shallow dish. Dip the chicken in the egg and then the nut mixture. Place on baking sheet. Bake, turning once, for about 15-18 minutes. Drizzle with Pomegranate sauce.
Sauce:
Bring Pom Juice, honey and ginger to boil. Boil for 15 minutes, until juice is reduced by half. Remove from heat.

AUBRAZILLA
I whizzed the walnuts very fine so I could better use them for the breading, but I had to add 1/4 cup oats to counteract the moisture. Instead of making a honey/ginger sauce I just used Pomegranate Molasses (common at Middle Eastern stores), lightly drizzled on top.
