For everyone wondering about how to mix it up - Put the DRY pudding mix in with the whipped topping. Some pineapple juice may be necessary to get the correct consistency. You want it to be thick, but spreadable. - 5/4/09

I never drain the pineapple and i dont know why it says to. its actually needed liquid and helps the pie to "set up". Folks...use the juice!!!

You can vary this recipe using fat free orange jello, lowfat cottage cheese with drained mandrin oranges instead of the pistachio & pineapple(tastes better than it sounds!) or use lowfat choclate pudding with no fruit. - 3/1/09

but that changes the entire recipe..and its not longer leprachaun pie!!

I have done this before and I do it for Valentine's Day too but use strawberry cool whip, strawberry gelatin and frozen strawberries. But I do mine in a cake pan and make my own crust with graham cracker crumbs. Very Good. - 2/1/09

Your recipe calorie count is inaccurate by about 100 calories per serving because you don't add the whole graham cracker crust, you add 1 serving of crust to the whole recipe. You also do not specify that you used sugar free pudding. - 7/23/09

I used sugar/fat free pudding and sugar free cool whip to cut calories. YUMMY!!! - 1/11/08

I have done this recipe as a salad at Christmas, but I don't drain the pineapple. Sounds good as a pie, I'll try it. We don't have Cool Whip or pistachio pudding in Norway. I use creme fraiche and bring the pudding mix back when I visit the states. They think it is something exotic here! shhhhh.. :) - 2/8/09

I make this on Thanksgiving and Christmas. It's watergate salad, minus the nuts and marshmallows and you added a graham cracker crust. Very good. - 1/29/09

I think the pineapple is supposed to be flecks of gold. I would like to try it with mandarin oranges too since it would be even more golden. I make my own crust and like this much better than the mix with marshmallows (too sweet). Thanks to all for the variations too. I will try the Valentines one. - 2/18/09

You can add about 1/2 cup halved green grapes to the pistachio salad/cool whip/pineapple mix. Tastes very good. My family also eats this without the crust, just as a salad and it's a fav! - 10/11/09

Been making this for at least 40 years with marshmallows. We call it "Green Yummy Stuff"!It is!! Now i have to use sugar free whipped topping and no marshies,, but still yummers! No crust required! - 3/20/09

BTW, this is really good served over a slice of angel food cake, rather than pouring into a graham cracker crust. - 3/3/10

I LOVED this!! Even though I misread and added in the pineapple juice by accident...lol! But it still tasted great and what a nice light pie for summer! I can't wait to make this again! YUM! - 3/25/09

I love watergate salad and sometimes add sliced banana to it. You could also add a sliced banana to this recipe or just use banana in place of the pineapple (for the person who is allergic to pineapple). I meant to add the banana today but forgot. I already have it chilling in the fridge. - 10/11/09

We have been making this for years without the crust! My family loves it! We use sugar free cool whip and sugar free pudding, this way you can add a few marshmallows. I will have to try with the crust. - 7/11/09

Made this for dessert tonight, I really liked it. I am going to omit the crust next time and use the mini marshmellows. It really craves my sweet tooth. Thanks for the recipe! - 2/15/09

Incredibly easy and ever so delicious. Mandarin oranges go great with a lime-flavoured pudding, and sometimes I'll add a glob or two of Dannon Light and Fit (Key Lime, Strawberry, or the Coconut ones are great). How easy, how delicious! - 3/23/10

I make this with marshmallows and chopped nuts. It's called Watergate Salad. I also do not drain the pineapple juice, and mix it with the pudding mix first and then add the rest of the ingredients. It's yummy! - 7/31/09

This sounds wonderful but I sure would like to know what the grams of sugar are, that is very important to me and they are never shown on any of the recipes. - 10/11/09
