Joy's Pork & Broccoli Stir Fry

Ingredients
1 lb Boneless Pork Chops cut into bite sized pieces1 Tbsp Canola Oil2 tsp garlic-crushed1 bag Frozen Broccolli Cuts1 medium Onion-julienned2 cups Red peppers-juienned or chopped8oz Fresh Portabella Mushrooms2 Cups Chicken Broth or Boullion4 Tbsp Corn Starch8 tsp soy sauce
Directions
1. Heat oil in pan, then add pork and cook just until no longer pink. Remove but keep warm.
2. Add Broccolli, mushrroms and onions to the pan. Cook until desired doneness is reached (I like mine kind of overcooked).
3. While veggies are cooking, mix together corn starch, soy sauce and chicken broth until corn starch is dissolved.
4. When veggies are done, add back in the pork and the chicken broth mixture. Stir until reaches desired thickness and pork is completely cooked through.
5. Serve over hot brown rice (not in calculations).
