Salmon Medallions with Crab

Ingredients
Crust for salmon:2 Tbsp Coriander seed (toasted and then ground)2 tsp sugar1 tsp cumin1 tsp curry1/2 tsp saltMix all ingredients in small container.Stuffing:1 can canned cabmeat3 green onions finely sliced1 tsp dried dill1 tsp dijon mustard1/4 cup mayo2/3 cup grated swiss cheese or fresh chopped spinach3 tsp Italian bread crumbs1 salmon fillet, skin removedSpread mixture on fillet, roll up, use toothpicks to keep roll. Place in crust mix, sear salmon in pan of oil on both sides. Place in baking dish and bake for another 15 minutes on 350.
Directions
Makes about 4 servings, but depends on thickness of salmon.
