Pam's Corn Salmon Chowder

1c of chopped onions and celery1/2 c sliced carrots4 oz. of smoked salmon (or leftover salmon)3 cans of diced potatoes2.5 c of frozen corn2 cups of Fat Free evaporated milk5 cups of Skim milk1 c of instant potatoes (for thickening)
Over medium heat, sautee' onions and celery in a soup pot sprayed with cooking spray. Add your carrots, crumbled up salmon, potatoes and corn. Now gradually add your evaporated milk. Simmer for about 5 min. The mixture should start thickening. Mix in your milk. Stir til well blended. Now GRADUALLY add instant potatoes until you reach the desired thickness. Simmer til ready to serve. Makes 12 - 1 cup servings.
