Seafood Enchiladas

12, 6 inch flour tortillas (used Mission)Filling:1, 8 oz. cream cheese, soft.5 cup shredded Monterey Jack cheese2 T nonfat milk2, 6 oz. pkgs crab meatSauce:.5 cup chopped onion3 T margarine.25 cup flour2.75 cup milk.25 t salt.25 t. pepper
Combine cream cheese, Monterey cheese, and milk. Beat until almost smooth. Stir in crab. Next, warm a pkg of flour tortillas in microwave 20 seconds. Spoon filling on each tortilla, roll up and place in 9 x 13 pan.
For sauce - In med. saucepan, cook onion in butter until tender but not brown. Stir in flour, salt, and pepper. Add milk all at once. Cook and stir until thick and bubbly. Pour sauce over tortillas. Bake covered with foil in a 350 degree oven 15 to 20 minutes. Remove foil, top with 1 cup shredded Monterey Jack cheese. Return to oven and bake 5 minutes.
