Ultimate Mac and Cheese

Ingredients
Whole wheat elbows, gouda cheese, low fat cheddar cheese, milk, white wine, whipped butter, flour, cayenne, nutmeg, salt, bread crumbs
Directions
Boil pasta until done. Drain. Melt butter in frying pan, add shallots, cook until they are golden. Add flour to shallot butter and cook and stir one minute. Add wine, stirring as you add liquid. Cook until thickened, add milk. Cook for one minute. Add grated cheese, on handful at a time, stirring until each handful is melted. Add salt, dijon, spices, stirring until all cheese is melted.
Pour drained pasta into cheese sauce. Mix together and transfer to a 2 qt. casserole. Sprinkle breads crumbs on top of mac and cheese. Cook for 15-20 minutes at 400 degrees.
