Gina's Garden Potato Salad

Ingredients
1 lb Red Potato1 Bag Earthbound Herb Salad Mix1 cucumber - peel on1 yellow bell pepper1 red bell pepper5 scallions12 T Ken's Steakhouse, Lite OliveOil Vinaigretter w/ Balsamic Vinegar Dressing
Directions
Cut red potatoes into bite sized cubes, place in pan cover with water, boil - cut untilfork just pierces cleanly.

Rinse and drain potatoes.

Chop cucumber and peppers into bite sized cubes. Chop scallions in a med dice. Put veggies and dressing in a large bowl and toss. Once cooled - room temp is fine, add potatos.

Divide Herb Salad Mix into 8 small bowls or 4 large bowls, top with potato and veggie mixture.

Makes 8small servings or 4 large. To make a 1 bowl meal, add 3-4oz of grilled or rotissieri chicken to each portion. [not in nutritional data]
