# Beans, black, 2 tbsp# Beans, pinto, .2 tbsp# Chickpeas (garbanzo beans),2 tbsp # Beans, red kidney, 2 tbsp# Beans, white, 2 tbsp# Beans, navy, 2 tbsp # Butter Beans, Large,2 tbsp# Canned Tomatoes, 400 grams # Vegetable Broth, 1 cup # Curry powder, 1 tbsp # Turmeric, ground, 1 tsp # *Cumin seed, 1 tsp # *Coriander leaf, dried, 1 tsp # Onions, raw, 1 medium (2-1/2" dia)# Garlic, 3 clovesolive oil, 1 tbspsalt and pepper
Chop onion and garlic and pan fry in olive oil until soft. Add mixed beans and spices and cook 2-3 minutes. Add vegetable stock and cook until slightly reduced, then add tomatoes and let simmer for 5-10 minutes as desired. Serve over basmati rice.
