Spinach Provencale

Ingredients

Two 10-oz boxes frozen spinach, squeezed dry1 large onion, chopped1 clove garlic, minced (or more if you like garlic)2 TBSP olive oil4 egg whites, lightly beaten (or two eggs)1 cup fresh grated parmesan cheesesalt & pepper
Heat olive oil and saute onion and garlic until onion is transparent. Add spinach and mix (note: spinach should almost be dry to the touch, so squeeze as much as you possibly can). Remove from heat. Stir together spinach mixture, beaten eggs and 1/2 of the parmesan cheese. Season with salt & pepper.
Bake in glass baking dish (about 8x8) at 375 for 10-15 minutes.
Note: the key is to squeeze squeeze squeeze the spinach unless you like soggy spinach. You should be able to put a handful in you hand, squeeze, and have it stick together well.
