Green Onion & Asparagus Soup

Ingredients
1 can (8-ounces) evaporated, non-fat milk6 large asparagus spears1 cup scallions, chopped3 garlic cloves1.5 cups vegetable broth1 tsp salt1 tsp black pepper, black 1 small pat butter
Directions
Melt butter in sauce pan over low-medium heat.
Add onions and saute for about 2 minutes.
Add asparagus, and saute for about 2 more minutes.
Add garlic and saute for about 1 minute.
Add 1 can vegetable broth and bring to a boil.
Cover with lid and lower heat to simmer for about 10 minutes.
After simmering, add 1 can evaporated milk and salt and pepper to taste.
Put in blender and mix well.
Serve with multi grain crackers.

    I loved this recipe. I substituted the milk with soy milk due to intolerance, but it is simple and quite honestly has an incredible flavor! - 3/14/07
