Ingredients
2 8 oz packages of lite cream cheese2 eggs1/2 C sugar1 tsp vanilla extract24 vanilla wafers1 can of cherry pie filling
Directions
Beat all ingredients together until smooth. Place vanilla wafer in cupcake papers with the flat side down. Put a heaping tbsp of cheese mixture onto vanilla wafer and bake for approx. 15 minutes at 350 degrees. Take out of cupcake pan and let cool. Add pie filling on top and serve. Makes 24 mini cheesetarts.
