Michele's Dried Fruit Scones

3 c. whole wheat flour1/3 t. salt1/2 c. egg beaters1 T. baking powder1 1/2 c. dried cranberries1/2 c. splenda1/2 t. baking soda3/4 c. lowfat buttermilk3/4 c. unsweetened applesauce1 orange rind (grated)1 lemon rind (grated)
In Medium Mixing Bowl, mix FLOUR and DRY INGREDIENTS (except Splenda) together, set aside. In a Large Bowl combine applesauce, spenda & egg beaters to that. Beat those together. Add the dry ingredients to the egg mixture, then add the lowfat buttermilk. Add a little more if needed to form dough; don't overwork dough. Fold in cranberries & all the lemon & orange zest. Mix well to incorporate evenly. Make into mounds with an ice cream scoop onto the cookie sheet. Brush with lowfat buttermilk; sprinkle with splenda. Bake for 22 min until golden brown.
Can be frozen and then microwaved to thaw.
