Asparagus and Mushroom Burrito

Ingredients
2 Mission whole wheat tortillas 2 Tbsp Smart Balance, Smart Balance Light Buttery Spread1/2 Cup Kraft Free Shredded Cheddar Cheese1/2 Cup Portabello Mushrooms5 Spear Asparagus1/2 Medium Onion (any variety, sliced thin)1 Clove Garlic1 Cup Old el Paso Refried Beans - Fat Free
Directions
Makes 2 servings.

I make mine in a non-stick pan and haven't tried it other wise.

Melt Smart Balance and saute onions and garlic on low heat and sweat them for 5 minutes.

Turn heat to medium and add the sliced asparagus and cook for 10 minutes, or until you are satisfied with the texture.

Add mushrooms and cook for 5 minutes, or unil you are happy with the texture.

While the mushrooms are cooking heat the refried beans in the microwave, followed by the tortillas as needed.

Combine to make one serving as follows:
1 Tortilla
1/2 Cup Refried beans
1/4 Cup Cheese (so it melts a bit over the warm beans)
1/2 Asparagus/Mushroom mixture
Fold up and enjoy.

    Easy to make and very tasty. I think I'll use a tad less beans and more of the asparagus/mushroom mixture next time. Glad I found the recipe - I never would have thought of putting asparagus in a burrito - wonderful! - 4/21/07
