Parmesan Chicken Thighs

Ingredients
2 skinless and boneless chicken thighsparmesan cheese gratedvirgin olive oil cooking spray
Directions
Cut thighs in half (butterfly style)
Spray a little olive oil spray onto chicken
Roll chicken in parmesan cheese
Ensure both sides are well coated
Spray olive oil into frying pan and cook thighs on moderate heat until coating is brown and crispy.
Turn thighs over during cooking to avoid sticking onto pan
Serve with asparagus spears, mashed pototo or seasonal vegetables.
Simply delicious!!
