Beef Mushroom Frittata

Ingredients
3 oz beef tenderloin-sliced1 small can mushrooms-drained1 scallion chopped1 red bell pepper-sliced2 eggs3 egg whites2 pats butter2 oz reduced fat cheddar1/2 c parmesan cheese1 tbls crushed garlic1/4 c skim milk
Directions
Saute vegetables in butter until tender. Add beef until cooked or reheated.

Beat eggs w/ milk and cheddar. Pour over vegetable/beef mixture and stir. Cook on medium low on stove top until semi set. Top with parmesan and place under broiler until completely set and brown.
