1 onion, minced2 tbsp. olive oil3-1/2 cups pureed tomatoes2 cloves garlic, minced or pressed4 tbsp. chili powder1/2 tsp. cumin1/2 tsp. oregano leaves, crumbled1 tsp. salt
Saute minced onion until limp. Add tomato puree and garlic. Gradually stir in chili powder. Add cumin, oregano and salt. Cover and simmer 30 minutes, stirring frequently.
Pour through wire strainer. Process 30 minutes or freeze after adding 1/2 tsp. lemon juice to each pint of tomatoes.
Makes 3 cups sauce.
