Thai Green Chicken Curry

8 oz Chicken breast no skin 100g fresh broccoli100g snowpeas200g zucchini2 oz uncooked basmati rice2/3 tin reduced fat coconut milk1 tablespoon green curry paste
Makes 2 servings
Pour coconut milk into wide pan
Add curry paste and bring to simmer
cut chicken into bite size pieces
Poach for 10mins in coconut milk, turning once
Add sliced courgettes and simmer for a further 5mins
Add small broccoli florets and snow peas and simmer for a further 5 mins
Serve with cooked rice
