Alexia's tuna patties

Ingredients
1 12oz. can tuna in water, drained1 cup onion, finely chopped1 cup red bell pepper, finely chopped1/2 lemon, juiced2 eggs3 tbsp flour1 tsp black pepper1 tsp dill weed1 tsp baking sodasalt to taste2 tbsp olive oil (for frying)
Directions
In a large bowl mix the tuna, onions, bell pepper, lemon juice, eggs.
In a separate dish mix the black pepper, dill weed, salt if using it, and the flour.
Heat a skilled, coate with 1 or 2 tbsp.of oil.
Divide the mixture into 8. Form patties.
Fry them about 2 minutes per side.

    I made these without the baking soda and red peppers, and ate it on a hone wheat bread with tomato, and it was not only filling, but very good. - 4/19/09
