Bleberry Oatmeal Muffins

Ingredients
1 cup oatmeal1 cup buttermilk or sour milk (1 cup milk and 1 tbsp vinegar - stir and let stand 10 minutes)1 cup whole grain flour - wheat, spelt1 tsp baking powder1/2 tsp baking soda1/2 tsp salt3/4 cup brown sugar, packed1 egg, beaten1/4 cup melted butter1 cup blueberries
Directions
Makes 12-18 muffins. Preheat oven to 400 F degrees. Mix oatmeal and buttermilk. Let sit while, in another bowl, you combine dry ingredients. Add blueberries to the dry ingredients and stir. Add the oatmeal mixture and mix only until blended. Grease muffin pan or use muffin cups. Fill 2/3 fill and bake for 20 minutes or until toothpick comes out clean.
