Vegetarian Penne

Ingredients
2c. uncooked Penne (I use whole wheat)1c. Baby Carrots, halved Lengthwise1 garlic clove, minced1T Canola Oil2 cans (14 1/2 oz. each) Stewed Tomatoes2c. frozen green beans2t Basil.5 t oregano3T Cornstarch (with .25 cup of water)1T Parsley
Directions
Cook Pasta until tender.
Saute carrots and garlic in oil
Add tomatoes, beans, basil, and oregano. Bring to a boil and simmer until tender
Combine cornstarch and water, add to veggies. Boil for 2 minutes
Stir in Pasta.

Makes 6 1-cup servings.
