Crustless Spinach Mini-Quiche

Ingredients
1 cup egg substitute1/2 cup skim milk20 grams canned spinach, drained1/2 cup shredded 2% milk cheese1 tsp black pepper1 tsp garlic powder
Directions
Mix all ingredients. Pour equally in 6 greased muffin cups. Bake in preheated 375 degree oven for 30 minutes or until golden and knife inserted in center comes out clean. Let cool, and enjoy.


NOTE: These will puff up like souffle, don't worry! They will shrink back to a smaller size after they're taken out of the oven.

    I LOVE these! I was able to make 9 mini quiches and they are very delicious. They are a bit spicy with 1 tsp of black pepper in them, so people who can't handle spice may want to switch that out or use less. You can't even taste the spinach, making it great for spinach haters! LOL! - 3/1/10

    Delicious!!! I made this yesterday morning and even measured my spinach. The recipe calls for what would be 1/5 of a package of frozen spinach, I measured, but used the 4/5 instead by mistake.     I bought the spinach, but was shocked at how little 20 grams is!! Won't be using spinach again. However, I added 3 large mushrooms, chopped fine and sauteed briefly.

    ALSO, couldn't find my muffin tin, so used a mini muffin tin (makes 12). Then, my recipe made 18!! Great for parties! - 12/8/09

    Very easy to make. I used shredded mexican mix cheese that I had on hand and it worked very well. I also used eggs instead of the substitute. We have a convection oven that I used since it is such a small amount to cook and lowered the temp to 350 and cooked for about 10 minutes. yummm - 10/21/09

    Very good! I used 4 eggs. The quiches according to the recipe tasted like scrambled eggs and I couldn't taste the spinach or cheese much at all.I made half with onions, rosemary and oregano.Those were very tasty. I'll experiment with other vegetables/spices. Had a hard time cleaning the muffin tin. - 6/1/11

    I used whole eggs, too -- as BEERAB mentioned -- 5 eggs. Yes it changes the calorie count, but I find it tastes beter than liquid egg substitute. - 4/21/18

    I thought i'd try it with a cup of egg whites and 2 whole eggs. Turned out great! I also used steamed fresh spinach, minced garlic and low fat cheddar - absolutely DEELISH! Topped it off wiht a little franks red hot after cooking - feels decadent! - 12/29/12
