Penne pasta with spinach and asiago cheese

Ingredients
8 oz. pasta - I chose Penne pasta.1/4 cup olive oil - could be even less if you choose.1 clove garlic - chopped.1 10 oz. bag of fresh spinach1 C. grated asiago cheese1/2 c. parmesian cheese1 t. salt3/4 tsp black pepper or to taste.
Directions
Cook the pasta according to the directions on the box. While it's cooking, heat the oil oil in a large skillet. Saute the chopped garlic until soft and golden, about two minutes. Add cleaned, chopped spinach as well as halved grape or cherry tomatoes. Cook on medium heat until tomatoes are fully softened and spinach is wilted.

Add to cooked and drained pasta and mix. Sprinkle in grated cheeses. The asiago cheese is a stronger cheese than parmesian so you could add less than the recipe called for.

Salt and pepper to taste.

This makes 6 servings.
