Ingredients
Directions
2 Half Chicken Breasts with no skin1 tsp Olive Oil1 12 inch Whole Wheat Pizza dough (I use the Fresh and easy brand or sometimes make my own by using whole wheat flour in a regular dough recipe.)2 Tomatoes3 Cloves of Garlic2 tsp Basil2 tsp Oregano1 large Red Pepper6 Oz Mozzarella Cheese.25 cup Parmesan CheeseCrushed Red pepper to taste
1. Grill Chicken (take two half breasts) on a low-medium temperature, you don't want to burn these just heat them. Let them grill for 10 minutes on each side. Slice when finished. If they are a little raw still grill for another 5 minutes on each side.
2. While waiting for chicken to grill, cut tomatoes into thin slices (less than 1/4 inch if possible). Mince Garlic, dice pepper, and shred cheeses if needed.
3. Roll out pizza dough onto a pan lightly covered in olive oil.
4. Bake dough for 2 minutes in 450 degree preheated oven.
5. Remove and add tomatoes and garlic first.
6. Sprinkle with Cheese.
7. Add Basil, Oregano, and Crushed Red Pepper. 8. Finally put Red pepper on top with grilled Chicken.
9. Bake for 8-10 minutes at 450 degrees.
Let cool for a moment before cutting, cut into eight pieces for proper serving size.
PS to make it lower calorie, decrease the amount of chicken and cheese. Most of the calories, besides those in the dough, come from these two.
