Chicken Fricase

Ingredients
1 lb chicken breast1/2 c onion, chopped1/2 c green pepper, chopped3 cloves garlic, minced4 tsp olive oil1 large potatoabout 20 green olives with pimento2 cup tomato sauce1 c water
Directions
Saute onion, garlic, and pepper in hot olive oil. Add chicken in cubes. Cook until chicken is browned. Add tomato sauce, water, and preferred spices. Mix together. Cut potato into chunks and mix in. Allow to simmer until chicken is cooked through and potato pieces are soft.
Serve over rice if desired.
