Poppyseed Chicken

1-1/2 lb boneless, skinless chicken breasts1 cup sour cream1 can Cream of Chicken Soup1 "sleeve" Ritz Crackers, crumbled4 TBS butter2 TBS poppyseeds
Cook chicken and shred or cut into chunks (I usually boil the chicken...then use the water to cook rice to serve with the dish later)
Mix can of Cream of Mushroom and the Sour Cream...then add in the chicken. Put into a 9x9 pyrex (or similar) casserole dish.
Crumble the Ritz crackers into a bowl, using your hands (not too small...leave some chunks )
Pour (melted) butter over and stir. Stir in Poppyseeds.
Pour cracker mixture on top of the chicken mixture and spread out evenly.
Bake at 350 degrees for 30 minutes.
Serving Suggestion: Serve over brown rice or desired starch.
