Spinach Lasagna

Ingredients
16 oz container (2 c) of 1% cottage cheese1/2 c grated parmesan cheese, divided1 egg, slightly beaten1 lb frozen spinach, cooked and drained12 lasagna noodles, uncooked2 1/2 c shredded 2% mozzarella cheese1/4 c chopped parsley1-26 oz (3 c) jar pasta sauce1 c water10 cherry tomatoes, quartered1 1/2 c fresh mushrooms3 cloves garlic3 green onions, finely chopped
Directions
Preheat oven to 350. Mix cheeses (1/4 c parm) and egg until well blended. Set aside. Cook and drain spinach. Pour spag sauce into spinach. Pour 1 c water into spag jar and shake, pour into spinach. Add mushrooms, tomatoes, garlic, and onions. Place 1 c of veg mix on bottome of 9 x 13 pan. Layer 3 lasagna noodles, 1/3 c cheese mix, 1 c spinach. Repeat layers 2 more times. Top with remaining 1 1/4 c mozz cheese and 1/4 c parm cheese. Cover tightly with greased foil. Bake 45 minutes. Remove foil and bake an additional 15 minutes or until bubbling. Let stand 15 minutes before cutting. Cut into 12 pieces.
