Feta cheese, 1 cupOlive oil, 2 tbspEggplant, dicedOnion slicedPotato, 2 mediumZucchini, 2cup slicedTomato sauce, 2 cupParsley, 2 tbsp
Heat oil in a pan. Add onion and stir.Add all the vegetables and stir for couple of minutes. Then add the tomato sauce, salt and pepper. Leave it to shimmer for 10 minutes. Add some water if needed. Empty it in an oven pan and put it in the oven for 40 minutes. 5 minutes before finishing sprinkle the feta cheese on the top .
