Creamed Salmon

3 Tbsp butter (organic is my fav)1/4 cup whole wheat flour2 cups nonfat milk (organic again for me...)Salt to taste1 full sized can of pink salmon, drained.
In a saucepan, melt butter over medium heat. When competely melted, whisk in flour..keep stirring quickly while slowly adding milk. The slower you add the milk, the thicker the sauce will be. When it reaches the desired thickness, add salmon and salt to taste. Yields 6 servings of approximately 3/4 to 1 cup.
Feel free to serve over toast or whole wheat pasta. One of our variations includes adding some ground flaxseed and Mrs. Dash Spicy Seasoning.
