Ingredients
Fettuccine, 160 gramsSmoked Salmon, 100 grams Lemon juice, raw, 65 gramsTarragon, ground, 1 tbsp Olive Oil, 14 grams Parmesan Cheese, grated, 50 gramsTossed Salad, 100 gramsSaltPepper, black
Directions
To begin, fill a large pot with water and bring to the boil on a fast heat before adding a little seasoning. I would advise you to use a larger pot than you may think so the pasta has enough room to cook without it sticking together.

A little splash of olive oil in the water can help. Drop pasta into the boiling water and cook for recommended time on the packet. Give the pasta a gentle stir from time to time to avoid sticking. Once you are happy that the pasta is cooked properly, lift it from the pan using tongs and refresh it under cold running water to remove starch.

When you are ready to serve, drop the pasta back into the boiling water for a few seconds to reheat it before draining thoroughly. Add the pasta to a separate pan and place on a very gentle heat.

Grate some fresh Parmesan and add to the pasta along with another splash of olive oil and tarragon. Be careful not to add too much as it can be overpowering.

Grate the zest from the lemons and add to the pasta along with the squeezed juice. Give the pasta a stir and check for seasoning.

Slice smoked salmon into strips and add to the pan with a handful of fresh rocket. Toss all the ingredients together. Finish with Parmesan, olive oil and more cracked black pepper.

Sorry, but what the heck is "rocket"?
Wait -looked it up - arugula (lettuce). Sure doesn't look as though there is any in this dish in the picture. - 2/11/13
