Easy Morning Glory Muffins

Ingredients
1 cup white flour1 cup whole wheat flour1/4 cup packed brown sugar2 tsp baking soda2 tsp ground cinnamon1/2 tsp ground nutmeg1/2 tsp salt2 cups shredded carrots1/2 cup raisins1/2 cup flaked coconut1 apple, peeled, cored and shredded3 eggs1/4 cup oil2 tsp vanilla extract1 cup low fat vanilla yogurt (or unsweetened applesauce)1 cup mashed bananas1/4 cup walnuts or sunflower seeds (sprinkle on top)
Directions
Preheat oven to 350 degrees F. Grease 12 muffin cups or line with muffin liners.
In a large bowl, mix together flours, sugar, baking soda, cinnamon, nutmeg and salt. Stir in the carrot, raisins, coconut and apple. In separate bowl, beat together eggs, oil, vanilla, yogurt and mashed bananas. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups. Top with chopped walnuts if desired.
Bake in preheated oven for 20 to 30 mins, until a toothpick inserted in center of muffin comes out clean. Makes 12 large muffins.
