Chicken Fried Rice

Ingredients
1 # Chicken breast (no bones or skin)2 eggs1 onion3 T. soy sauce2 C. brown rice5 oz. sliced water chestnuts1.5 T. sesame oil2 T. canola oil1/4 C. sherry1 garlic clove, minced1 C. sliced scallions1 C. frozen peas
Directions
MAKES 6 SERVINGS

Cook Rice & let cool (good to cook the night before)

Cook egg like an omelet. Remove from pan in 1 piece.
Cut chicken into bite size pieces
Cook chicken in 1 T. oil. Dice onion & add to pan. Cook 1 minute
Stir in 1 T. oil, Sherry, 3 T. soy sauce & garlic.
Add rice & cook 3 minutes (stir often)
Slice scallions & add to pan.
Roughly chop water chestnuts & add to pan.
Add peas & sesame oil
Cut egg into thin strips & add back to pan.

    I would use a nonstick pan and eliminate the oil. Use a spray for the eggs. - 3/20/07

    sounds good.....I do Lean Cuisine Chicken Fried Rice with only 5g of fat...but this sounds good too - 3/20/07
