French Toast Casserole

Ingredients
4 ounces day-old French or Italian bread, cut into 3/4-inch cubes (about 4 cups)1/3 cup golden raisins1 (3-ounce) package cream cheese (low or no fat) cut into 1/4-inch cubes3 large eggs1 1/2 cups 1% milk1/2 cup maple syrup1 tsp vanilla extract2 Tblsp granulated sugar1 tsp cinnamonAdditional maple syrup, optional
Directions
Spray 11 x 7 inch baking dish with nonstick cooking spray.

Place bread cubes in single layer in prepared baking dish. Sprinkle golden raisins and the cream cheese cubes evenly over the bread cubes.

Beat eggs in medium bowl with electric mixer set at medium speed until well blended. Add milk, maple syrup and vanilla extract; beat until well blended.

Pour egg mixture evenly over bread mixture. Cover; refrigerate at least 4 hours or overnight.

Preheat oven to 350 degrees F. Combine sugar and cinnamon in smnall bowl; sprinkle evenly over casserole.

Bake, uncovered, until puffed, golden brown and knife inserted in center comes out clean, about 40 to 45 minutes. Cut into squares and serve with additional maple syrup, if desired.

    oh my, too good! I used maple syrup from our own trees. Next time I will not cube the bread, just use it sliced. I will spread the cream cheese evenly over each piece of bread rather than useing cube cream cheese. I got one piece of this! DH ate all the rest. - 11/13/10
