Spanish seafood tortilla

Ingredients
1/2 c. chickpea flour (besan)1/2 c. white or whole wheat flour1/2 tsp. baking powder1 c. water (more if needed)1/3 c. chopped scallions1/2 c. chopped shrimp, scallops or other fish2-3 Tbslp. chopped fresh herbs (parsley, dill, cilantro)1 Tbslp. olive oil, or more as needed
Directions
Blend the flours and baking powder, stir in water to a consistency of pancake batter. Fold in scallions, seafood, and herbs, season with salt and pepper.
Generously grease a non-stick frying pan with olive oil. Pour batter into pan and cook until edges are set (3 min.) flip and cook for an additional 2-3 minutes. Be careful not to overcook or your seafood will become rubbery!
