Oven Fried Cod

Ingredients
Cod , 2 filletBread crumbs, dry, grated, seasoned, .5 cupYellow Cornmeal, .5 cup1 egg Canola Oil, about 3 tbsp Season any way you like for great flavor (I used Pike's Market Dry Rub)
Directions
Set oven to 475 degrees. Heat oil in an oven safe pan or skillet on high heat on the stove top. Mix dry ingredients in a large Ziplock bag. Coat the fish , dip it in the egg, and then coat again with dry mixture. Place cod in pan and fry until brown, about 1 minute, on each side. Place whole pan on the second rack from the bottom of the oven. Cook about 5-6 minutes or until just cooked. So yummy!
