Stuffed Shells, Spinach and Cheese

Ingredients
Ferrara Pasta Shells1lb Ricotta cheese1/4 cup mozzarella cheese, grated1/4 c grated parmesan cheese1 egg, slightly beatensalt, pepper, and parsley to taste3 c spinach sauteed in 1 T evoo2 cloves garlic
Directions
Saute spinach and garlic in evoo. Wilt, then drain. Combine spinach and cheeses in food processor, pulsing until blended and spinach is slightly cooled. Add egg.

Boil shells for 8 minutes, drain and place on paper lined pan.

Lightly cover baking dish with favorite sauce. Stuff shells and place in pan. Cover lightly with sauce. Sprinkle with additional cheese, if desired.

Bake 45 minutes in 350 degree oven.
