All Bran Griddle Cakes

Ingredients
1 c. all-bran cereal1 c. hot water1/4 c. eggbeaters1 1/4 c. skim milk, divided 2 c. all purpose flour3 1/2 tbsp. splenda1 tbsp. baking powder1 tsp. baking soda1/4 tsp salt
Directions
In a small bowl stir together all bran cereal and hot water, set aside. In a large bowl beat eggbeaters and 1/2 c. skim milk. Add reserved all bran mixture with remaining milk and next 5 ingredients. Stir until well combined. Spray skillet with non-stick cooking spray. Heat over medium-high heat until hot.

Drop the batter by scant 1/4 cupfuls and cook until lightly browned, turning once.

Makes 8 large griddle cakes
