red lentil curry soup

Ingredients
4 cups red lentils1 small onion1 large carrot3 cloves of garlic4 bay leaves4 tbsps curry powder8 cups of water1.5 cups of plain soy milk1 tbsp olive oil
Directions
chop vegetables and add to saute pan with 1 tbsp of olive oil cook on low heat until onions are translucent and add soy milk keep on low heat. Add lentils water and bay leaves to stock pot and bring to a boil and add vegetable and soy milk mixture. Let simmer and add curry powder, stir and simmer until flavors are infused.
